It’s time for a savory dish, don’t ya think? Baking is my life, it’s what I do, but it’s not all I eat (even though I’d like to).  I was looking back on recent posts, and there was certainly a baking inspired theme. Well, today we will do the exact opposite of tarts, and cookies, and pancakes. We are making [No So] Sloppy Joes.

This past weekend, I participated in something larger than myself and walked away truly humbled and inspired.  I was fortunate enough to spend the weekend on the Polyface Farm with local farmers and several other Paleo bloggers, authors, and eaters to raise awareness (and money) for the Farm to Consumer Legal Defense Fund. Their organization promotes the rights of “alternative” farmers and artisan food producers– AKA those who choose to bring us natural food like grass-fed meat, raw milk, and food without pesticides, antibiotics, or unnecessary hormones.

Cookies have got to be the happiest of all desserts. Sure cupcakes are great, but let’s face it, a cupcake is just a muffin with a fancy hat. Ice cream is tasty and wonderful during the summer, but it loses its pizzazz come winter. Everyone loves cookies, all year long. Heck we even leave them as a token of our appreciation for the Man in Red and his flying deer. They are versatile, customizable, and whenever they come out of the oven children and manly CrossFitters alike will scream, “COOKIES!”.

  5. No Bake Dessert – Coconut Milk Parfait

I love to bake, it’s what I do. There is something about seeing a loaf of bread, cookie, or pie come to life in the oven; taking an item in its rawest form and molding it into the dessert. And then there is that smell. It’s no surprise that real estate agents often have a batch of cookies cooking in the oven before an open house; baking brings a sense of nostalgia and it’s one of my favorite reasons to throw on the apron.

But you know what, baking? There are some things about you that aint so pretty. If you’re not careful, you can burn things while baking…including my forearm. And on a hot day, the last thing I want to do is crank up the oven in my apartment to 350 degrees.

This past week has been hot, hot, hot in DC. Like eat dinner in your undies hot. But I also had a crazy sweet tooth last week. So I struggled. I’d look longingly at my oven, then down at my phone reminding me of the 100 degree heat with 1000% humidity. What’s a girl to do?!

    No bake dessert, that’s what.

  6. Gluten-Free Chocolate Zucchini Cake

    A Haiku for cake:

    Cake is delicious
    Chocolate. Frosting. Zucchini?
    Hell yes, zucchini.

Who says veggies have to stay on the dinner plate; can’t they have a little fun too?

Just like carrots, zucchini is crazy good when added to cake recipes, especially when that recipe has chocolate. So take advantage of summer’s bounty and bring this bad boy to your next barbeque.

Forrest Gump was right, sometimes, shit happens.

Sometimes you forget to set the oven timer when you have muffins baking. Sometimes your muffins get overcooked. Sometimes, you forget your overcooked muffins in your car, and they sit in the hot sun for half a day.

I tend to day dream during the day, and while I’d like to think I day dream about normal 26 year old things, in reality I think about what my cat would look like in a hat, or how to make traditional desserts Paleo. In fact, I think about these things a lot.

I recently had a day off in the middle of the week. Generally, any time off is something to celebrate these days, but having the day off on a Tuesday is kind of magical. There is no pressure to be anywhere and you don’t have to get all dressed up for brunch or…heck, even shower. Having a Tuesday off the perfect excuse to get things done around the house. I cleaned the apartment top to bottom, did FIVE loads of laundry, had time to run errands, and spent the day cooking. It was awesome. Really.
I knew I wanted to make a Sunday Dinner (since this was my weekend and all) and it just so happened that we had a beautiful beef chuck from Polyface Farms in the freezer, so I spent the day prepping for a Pot Roast. If you weren’t jealous of my day earlier, now you can be.

  10. Paleo Mocha Frappuccino

Holy moly, ladies and gents – this could very well be the mother-load. A Paleo Mocha Frappuccino. That’s right. You’re welcome in advance.

I love coffee. A lot. So much so that Santa brought me an amazing coffee maker for Christmas this year; there is just nothing better than starting your day off with coffee weather it is a hot or cold Cup of Joe. My dad started us off early, introducing my brothers and me to “cowboy coffee” which was really just a cup of milk and sugar with a dash of coffee, but we thought we were so cool to drink it with Daddy. He had this way of drinking coffee that I will never forget; cup in one hand, the other placed on his lower back, and as he sipped his coffee, he would smack his lips together and say “Ahhhh”. That was his moment, his start to the day. And as he took that fist sip from his mug, you could tell he was somewhere else entirely, even for just a moment. Who knows, maybe that’s why I enjoy it so much, it’s my way to get away while starting the day at the same time. Seems productive, don’t it?
