    I recently had a day off in the middle of the week. Generally, any time off is something to celebrate these days, but having the day off on a Tuesday is kind of magical. There is no pressure to be anywhere and you don’t have to get all dressed up for brunch or…heck, even shower. Having a Tuesday off the perfect excuse to get things done around the house. I cleaned the apartment top to bottom, did FIVE loads of laundry, had time to run errands, and spent the day cooking. It was awesome. Really.
    I knew I wanted to make a Sunday Dinner (since this was my weekend and all) and it just so happened that we had a beautiful beef chuck from Polyface Farms in the freezer, so I spent the day prepping for a Pot Roast. If you weren’t jealous of my day earlier, now you can be.

  3. Gluten-Free Meatballs

    Let’s play a game shall we? You just have to answer a few questions…no pressure.

    1) What’s the best part about spaghetti and meatballs?

    2) What’s the best part about a meatball sandwich?

    3) Why is Cloudy With a Chance of Meatballs such an outstanding book?

    If you answered “the meatballs” to all three of those questions, then you’d be right. Whenever you have a ball made of meat it will be sure to make any situation better; the spaghetti, bread, or pages without meatballs are just a means to get you closer to the ultimate prize. Hence my realization one night – why do meatballs have to be a topping on something else, aren’t they good enough to stand alone?

    The answer to that questions is: Yes, yes they are.

  4. The Incredible, Edible, Paleo Deviled Eggs

    Eggs are amazing. They are literally life packaged in a cute little shell, and man on man is life delicious. Each time I am cooking eggs (which is a lot), I sing the egg jingle in my head, you know what I am talking about, “The incredible, edible egg!”.

    As I was prepping for a New Year’s Eve party, I knew I wanted to have eggs on the menu. In my opinion, there is no better party appetizer than deviled eggs. However, if you have ever made traditional deviled eggs, you know that some of the ingredients are a bit questionable, so I whipped up Paleo Deviled Eggs made with another favorite of mine, avocados.

  5. Can’t Get Enoff Stroganoff

    I would say I am generally a happy person; I smile…a lot, I find joy in the little things in life, and I talk to my mama each week (sometimes daily). However, there are certain things that make me over-the-moon happy without fail including daisies, any Meg Ryan movie ever, and this beef stroganoff recipe. For me, this is the comfort food of all comfort foods. What makes it even better is that it’s made in a Crock Pot, so not only is it easy, but it fills your home with the most beautiful aromas all day long. What’s not to love about that? So as you gather with family this holiday season, consider making this stroganoff, it’s sure to be a crowd pleaser.

  6. No-Cream of Mushroom Soup

    Dang, sorry I have been hella MIA recently. I suppose starting a new job, Thanksgiving travel, and a mild stint with the flu will keep a gal pretty occupied. But I am back and soup-er excited for this next recipe.

    Soup, sweaters, and snuggling are at the top of my must have list as the temperature drops and I have a mighty fine soup for you today (you’re on your own to find the other things). Canned soups are easy to whip up and easy on the wallet, but if you take a look at the ingredients and nutrition labels that come along with them, it will scare you straight – or at least that is what happened to me. So I was on a mission to come up with a version of cream on mushroom that had neither cream nor cornstarch. And surprisingly, it’s not that much more difficult than warming up a can gosh-knows-what.

  7. Babe’s Meat Sauce

    When I think back on some of my favorite traditions naturally, holiday quirks come to mind, like Santa taking the effort to put stockings on the foot of my brothers’ and my bed, or my father’s completely elaborate Halloween decorations. ( I am still bitter about him destroying one of my favorite slips by creating a ghost, flying to greet trick-or-treaters as they opened our gate.) However, most of the things that make me feel at home are meals that have been passed down, recipes that are so ingrained in my memory that they have become part of me. Grandpa’s potato latkes, Mama’s oatmeal, and my grandmother’s infamous meat sauce are all remembered fondly.

  8. Ginger Coconut Kale Chips

    As the weather gets cooler, the idea of staying in and catching up on old movies and bad TV seems pretty is an activity I can stand behind. Naturally, when you’re taking part in a marathon of Modern Family, you are going to need sustenance to get you to the finish line, and kale chips are my snack item of choice. Kale is a delicious treat on its own, but cover it with olive oil, ginger, and coconut shavings then bake till crispy… and you’ve got yourself a winning combination, mister. Serve them to your boyfriend and maybe you can get away with throwing in some Princess Diaries, maybe.

    It’s good to have a bit of versatility in life. Just like reversible jackets are clutch in any wardrobe, recipes that are flexible with ingredients are valuable to have in your back pocket. That’s why I love this “crust-less quiche” or I guess you could call it a frittata, I just call it delicious. The foundation is the same, but you get to have fun with the accessories of filling.

  10. Cavemama’s Ribs, Sweet Potato Mash, and Rainbow Chard

    I recently came home from a trip to Ireland and while I was there I completely fell in love with the country. Not only is magically beautifully (I honestly think I found fairy trees) but their attitude toward food is inspirational. The Irish take pride in supporting local farmers so much that even McDonald’s aired TV commercials to the tune of ‘Where Everybody Knows Your Name’ – highlighting their relationship with the farmers next door. Driving just five minutes outside any major city, you will find cows and sheep roaming freely in pastures, and occasionally in front of your car…on a windy road…when you’re lost…and driving on the left side of the street for the first time.

    Local food in Ireland is a lot of good ole meat and potatoes (A.K.A. amazing ole meat and potatoes with root veggies and leafy deliciousness). I am a meat and potatoes kind of girl, so you can imagine how happy I was. Once I came back to the states, all I wanted to do was cook up my own M&P, but with a DC twist. That’s when I decided to make spareribs, mashed sweet potatoes with compound butter, and rainbow chard (spoiler alert: there is so much gold at the end of this fairy tale).
